Bikini Recipe

Yields 10 people

For the Clementine Cordial (produces 750ml)

300ml recently pressed clementine juice
200ml fresh lemon juice
500g fine sugar

Ingredients for the Cocktail (yields 850ml, enough for 10)

400ml decent vodka
100ml classic gin
150ml peach schnapps
200ml clementine syrup (see above)
Fresh cranberries, as a garnish
Mandarin essential oil, to finish

Method

For the Syrup: Place all the items inside a saucepan, heat until it reaches a simmer, agitating so the sugar melts. After that, remove from the heat allowing it to reach room temperature fully. Decant to a sealable bottle, cap it and store in the fridge, where it will keep for up to one month.

Preparing the Premix: Mix the specified liquid ingredients into a big jug, let it rest for one hour, then strain best through cheesecloth, to ensure it's perfectly clear.

For serving: Pour 85ml from the premix to a mixing glass filled with ice, gently stirring lightly for one minute to cool it down. Strain to a cold coupe glass or similar, decorate with a few cranberries adding the final touch by giving it a light spray of mandarin oil over the top.
